INGREDIENTS:

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 1 tablespoon psyllium husk powder
  • 1/2 teaspoon salt
  • 2 cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 2 large eggs
  • Optional toppings: sesame seeds, poppy seeds, everything bagel seasoning, etc.

METHOD OF PREPARATION:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond flour, baking powder, psyllium husk powder, and salt.
  3. In a microwave-safe bowl, microwave the mozzarella cheese and cream cheese for 30 seconds at a time until melted, stirring in between each interval.
  4. Add the melted cheese mixture and eggs to the dry ingredients and mix well until a dough forms.
  5. Divide the dough into 8 equal pieces and shape each piece into a bagel shape.
  6. Optional: Dip the tops of the bagels into a bowl of sesame seeds, poppy seeds, or everything bagel seasoning.
  7. Place the bagels onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
  8. Let the bagels cool for a few minutes before slicing and serving.
